Recycled Bagel Chips

Call your local bagel store in the afternoon and ask them if you can pick up the leftover bagels at the end of the night. Most bagel shops have an excess at the end of the day and are happy to give them away. Once obtained, slice the bagels starting at the end into 1/4 inch slices (or thicker if you’d like!) and bake in the oven on a cookie sheet at about 375 degrees for 5 minutes. Flip and repeat on the other side! Top with your favorite spread and tasty treats. We like to use the Creamy Shiitake Coconut Dill Dip with roasted mushrooms.

** tip— if you have an oven grate, use this to bake the bagel chips and you wont have to flip, because it will cook on both sides!

Creamy Shiitake Coconut Dill Dip

shiitake mushrooms
a bushel of dill
a lemon
salt and pepper 
olive oil
coconut milk
red onion 
garlic

Dice up the mushrooms and saute for a few minutes in olive oil. Add in salt, pepper, and garlic, and cook for a few more minutes. After it’s fragrant and beginning to carmelize, remove the mushroom mix from the heat and let cool briefly. Then, put the mushroom mix, chopped dill, chopped onions, lemon juice, and coconut milk in a blender and pulse/blend until thick and creamy!
